  • 250 g yellow onion
  • 120 g grated cheese
  • 4 slices country bread
  • 60 g flour
  • 1 liter chicken, beef or vegetable broth
  • 60 g butter
  • Salt pepper

Making Onion Gratin Soup

Peel the onion and cut it into rings. Fry them in a pan with oil for five minutes over medium heat. Sprinkle with flour and stir. Cook until the flour is the same color as the onion.

Gradually pour the stock into the pot, then season with salt and pepper. Cook for 35 minutes over low heat.

Meanwhile, toast the bread slices and preheat the oven grill. When the soup is cooked, divide it into four heatproof bowls, put a slice of toasted country bread in each of them and sprinkle with grated Gruyère cheese.

Bake for five minutes and serve immediately.
