In 1975, Valerie Giscard d’Estaing made Paul Bocuse a Chevalier of the Legion of Honor. At the Elysée, the chef serves beef broth with truffles and puff pastry to the President of the Republic: the famous Soupe VGE is still on the parent company’s winter menu (€98).

In her book Gourmet Broths, culinary author Keda Black has compiled 60 “slurp” recipes, including a vegetarian version of VGE soup with mushroom broth and seasonal vegetables.

The Bouillon République has just replaced the Lion’s Head soup and puff pastry with onion soup and a slice of Cantal toast as a crust (€8.50). Good for good.

The Setime restaurant publishes its own book. A story of ten years of creativity, meetings, projects and… recipes, including eggnog and baked buckwheat brioche with onion soup. Appetizing.
